Ramos Gin fizz with 1642 Yuzu

- 1 oz of Gin Menaud
- 1 oz of lemon juice
- 0.75 oz of simple syrup
- 1 egg white
- 1 oz of fresh cream
- 0.25 oz Maison Orphée Olive Oil Organic Cuisine
- 1642 Yuzu
- Pour all the ingredients into the shaker except for 1642 Yuzu.
- Shake vigorously for the first time, without ice cubes, about 1 min (dry shake).
- Add ice cubes, then shake vigorously for about 2 minutes.
- Let rest in the refrigerator for about 3 minutes.
- Pour 1 oz of sparkling water into a very cold glass.
- Pour the mixture and the 1642 Yuzu simultaneously into the cold glass Extend with the rest of the shaker
- Garnish with a sprig of thyme
